Modena Ham, to qualify as such and display the brand, must be produced according to the rules disciplining production established with the European Community.
These rules indicate in detail the requisites of raw material, the zones of supply and production, the productive techniques and controls for the purpose of certifying the production and authorise the application of the safeguard brand after curing.
Modena Ham is obtained exclusively from the fresh thighs of pigs born, reared, and slaughtered in the following regions: Emilia Romagna, Veneto, Lombardy, Piedmont, Molise, Umbria, Tuscany, Marche, Abruzzo, Lazio and Friuli Venezia Giulia, according to the productive prescriptions concerning the breeding, feeding and rearing of the pigs destined for the safeguarded production.
