Currently the Modena Ham Consortium consists of 16 member businesses, with an overall productive potential of about 1,500,000 hams, of which on average 180,000 are Denomination of Origin Protected. The production of cured "Modena" Ham takes place in factories of diverse sizes, mostly quite small, but with identical methodology. The constant search for quality is seen as a winning strategy in economic terms also, in as much as it is capable of opening up new markets. The Consortiums activities are directed to the safeguarding, promotion and valorisation of Modena Ham, and in particular to maintaining and safeguarding the organoleptic and nutritional characteristics of the product, providing the consumer with the guarantee of wholesomeness and genuineness required of a typical product. |
