The "Modena Ham” denomination of origin is legally protected by Law no. 11 of 12 January 1990: "Safeguarding the denomination of origin of Modena Ham, delimitation of the production zone and characteristics of the product" and by EEC Regulation 1107/96.
The domestic regulation is today superseded by that of the Community; under EEC Regulation 2081/92 the typical products of member countries have been registered in the European ambit and are subject to a protection regime. Modena Ham has also obtained DOP recognition (Denomination of Origin Protected).
This seal identifies and protects products produced and transformed in a well delimited and defined geographic area from fraud and imitation.
The current regulations comprehensively and exhaustively cover the production processof Modena Ham, imposing a complex and articulated system of control on the entire production chain.
Modena Ham can exhibit the DOP seal if it conforms to the following essential requisites:
- it must show a strong link between the production zone and the geographic environment in which the production itself takes place;
- it must be obtained from raw materials having determined characteristics and provenances from an express and delimited geographic zone;
- the productive procedures disciplining production must be respected and verified in the control phases by the appointed entity.
